Wild Thyme (Thymus serpyllum)
Our native thymes are pretty abundant in the right places and these beauties were hugging rocks in the Derbyshire peaks (our camping holiday).
All thymes, wherever they grow, have cooking and medicinal uses and have long been used in this way. The taste of thyme is strong, so just a little in salads chopped fine is delicious, or their softer flavoured flower heads. Whilst their strength of flavour in long, slow cooking dishes really pulls out their essential oils.
It also makes a useful summer insect repellant!
As a tea for it can help headaches, calming the mind and easing the gut and digestion.
