Fat Hen the opportunistic medicinal, nutritious weed
(Chenopodium alba)
This opportunistic medicinal, nutritious weed grows rapaciously in most soils and many countries around the world.
This picture shows a bountiful heavy-laden crop of flower seeds that can be harvested now or in a month or two. The whole plant is deservedly known as a good food source for animals and humans alike. High protein, B complex, vitamin A and much more and from all parts of the plant from Spring leaves to flower spikes and seeds. (May to October harvesting potential). Whilst medicinally its long usage for digestive support to include help for the bowel is common knowledge. Of more recent understanding we now know it is rich in antioxidants and useful anti-inflammatory compounds making it a helpful modern plant as a food source used for healing and soothing.
Leaves are useful in salads or lightly cooked similar to spinach
Flower/seeds (at any growth stage from green through to reddish/dark brown, black) Add to salads and smoothies. At the end in casseroles, soups and similar.
