Summer Salads – Include the Parsley!
Parsley is persistent and incredibly medicinal having at least 80 nutrients to its name. Vibrant sharp and delicious it sets off any meal, sandwich, salad, or smoothie. Eat daily, either from your garden or supermarket, any variety works, curled or flat. It is hugely underrated as a healing nutritional being rich in vitamins A, C and all the B’s to include folic acid. According to studies it is classified as a ‘chemo-protective food’ which can neutralise types of carcinogens (like the benzopyrenes that are part of cigarette smoke). It is rich in flavonoids, especially luteolin and very rich in chlorophyll. It is important to kidney health, helping to ‘flush’ and clear the whole urinary tract.
