Dr. Schulze animatedly shares with the students the importance of what we eat and how we can reduce illness by 50-75% through dietary changes. He comments that many people think his food programmes are radical and he explains why they are nothing compared to medical intervention. He continues to discuss the political, financial and environmental aspect of eating less or no meat and dairy. He encourages us to be pioneers of how we think and eat.

• The health building food programme which is possibly vegan or vegetarian but at least low meat and dairy. He suggest this for 48 weeks a year to maintain good health. In the main it consists of vegetables, fruit, nuts and seeds. It should be fun, tasty and imaginative.
• The purifying food programme consisting of raw fruit, vegetables, sprouted grains, seeds and nuts.
• The juice fasting programme. Just water, juiced vegetables, fruit and herbal teas.
These last two programmes he suggests for 4 weeks (1 week a season) to either combine or pick one or other for 4 weeks a year to give our bodies a tone-up. He explains to the students how to use these programmes for varying levels of illness and also warns to be mindful and flexible about the climate and season and what foods are chosen to fit these varying needs.
