‘Fluffy’ Fennel Foliage (Foeniculum vulgare)
These plants always grow fast and furious in early Summer, reaching heights well above many of the other herbs. Their fluffy foliage can add an extra ‘zing’ to any type of salad or smoothie!
But if you have a lot of fennel foliage, then try making fennel pesto. Follow any regular basil pesto recipe and instead of pine nuts use toasted walnuts. Do not forget lots of garlic, black pepper, and lemon. It is a medicinal pesto, but so delicious too! You can also freeze it – to enjoy it long after Summer has gone!
