The Delights of Winter Rosemary
The bracing scent of rosemary can brighten our mood and our cooking. Rosemary used to be in the four or five most popular evergreens for decorating the home at Christmas alongside holly, ivy and mistletoe since the medieval period. And it only went out of fashion before the 20th century, happily, it’s making a comeback.
Rosemary was traditionally spread on the floor at midnight on Christmas Eve so as people walked onto the dark green foliage, the fragrance would fill the air. All this is in the belief that those who smelled rosemary on Christmas Eve would have a year of health and happiness.
In Winter it gives us warmth and rich flavours in hearty dishes whilst its bitterness offsets fats and rich foods and helps digestion. It will keep the cold out made into an herb tea and aid circulation, stimulating blood flow to every capillary in the body especially the head. It also stimulates the mind but not in an overstimulation sense, as rosemary is known to reduce excess cortisol levels in just minutes, soothing stress. In which case drink the tea but also inhale some essential oil.
